Georges Rasse resists the touristic wave
Saint-Jeannet is a little village on the hillside of Nice. Until the 1950's, every piece of ground here was dedicated to the vine and the village used to count up to 700 wine estates.
But the outstanding geographical situation and the rising of tourism encouraged residential land ownership and winegrowers have given up their activity.
All but one : Georges Rasse, upright, inspired and happy in his fascinating work. Georges shares his passion and know-how with local pupils who never miss the opportunity to take part in the grape-picking operations and to listen to respectable Georges speaking with his heart about terroir and tradition. |

Comparable to Bellet but even more distinguished
Located 25 km north of Nice on the right bank of the Var river, Saint-Jeannet faces the Bellet vineyard famous for its delicate and distinguished wines.
On barely 5 hectares Domaine Hautes Collines Côte d'Azur Georges Rasse makes a very special job that deserves a few explanations :
Grape-picking takes place from September till November to ensure optimal ripening (late harvest for grape varieties such as Mourvèdre, Braquet and Rolle let noble rot come). Yields are very low (around 25 hl/ha) in order to obtain very structured wines, noble tannins and various intense aromas. |

Sun exposure for wine maturing !
Here winemaking follows the oldest traditions :
Red wines aren't fined or filtered. Against all winemaking theories they first stay 3 months outside in transparent jars before maturing 12 months in oak.
On-lees oak maturing and stirring ensure the production of finest white wines.
Rosés are obtained through ancestral foot-cruhing.
The man, The Domaine and the wines are absolutely fabulous. It is a great honour to get to know them.
The yearly production of 20.000 bottles is mainly sold to visitors and to the local gastronomy. Georges also looks forward to widening his commercial horizon beyond french borders... |
